Super-Quick Lunch Open Sandwich
Ingredients
2 Slices Whole Wheat or Whole Grain Bread or Tortillas
1 Can Amy’s Organic Refried Beans
1 Avocado
1/3 Lime
Cilantro
Sea Salt
Combine the avocado, cilantro, sea salt and juice of 1/3 lime into bowl, mashing it all with a fork until you have made Guacamole.
Open can of Amy’s Organic Refried Beans and spread on slices of bread or tortillas. Spread Guacamole on top of refried beans.

Being a single parent, you want the quickest, easiest, and yummiest dinner you can make. Making it budget friendly always helps too! I wanted to introduce a really easy skillet recipe, taking just about 20 minutes from beginning to enjoying:
Ingredients:
Butter
Boneless chicken breast, skinned and cut in half
1 1\2 cups of water
1 1\2 cups quick cooking rice, like Uncle Ben’s
1 1\4 cups of sliced onion, I prefer green
4 ounce can of mushrooms, drained
1 can of cream of mushroom soup
Salt and pepper to taste
1 cup of shredded Cheddar cheese
In large skillet, on medium heat, melt butter and add chicken and cook on both sides until it is ‘fork’ tender. Add remaining ingredients, except cheese. Cover and continue cooking for an additional 10 minutes. Sprinkle with cheese when you’re serving!

Yields: 2 servings
Cook time: 15 minutes
Ingredients:
4 slices Texas Toast
3 each Eggs
1 tsp Vanilla extract
1 dash Nutmeg
1 tsp Lemon Extract
1 oz Milk
Powdered Sugar
Preparation:
Scramble eggs in a bowl with cream, vanilla, nutmeg, lemon until all incorporated and there are no streaks in the eggs. Dip bread in batter and pan fry on a medium heat until golden brown on both sides. Remove from pan and cut into triangles, strips or whatever tickles your fancy. Sprinkle powdered sugar over the top.
Note: This breakfast does not need to be served with syrup, and can be made up to one day in advanced to save time. Can be reheated in a microwave for a short time after initially prepared. Can also be made without the lemon and with cinnamon instead.

Serves 2
Ingredients:
½ Head of Lettuce
1 Medium Tomato
1 Small Onion
2 Tablespoons Cilantro (fresh is better, but dried is fine)
½ Lb Ground Beef or Turkey
½ teaspoon Ground Cumin
½ teaspoon Ground Cheyanne Pepper
½ teaspoon Ground Paprika
½ teaspoon Ground Red Pepper
½ teaspoon Garlic Powder
½ teaspoon Onion Powder
Salt
Pepper
½ cup of water
10 Tortilla Chips
1 cup of Rice
½ cup of Grated Cheese (this can be omitted for those who are lactose intolerant or to keep fat content down.)
Preperation: Cut up lettuce into bite sized pieces, and onion and tomato into like sized half bite pieces (and inch to and half an inch in size). Put everything but lettuce into a bowl and season with salt. Cover and put into fridge. Add all spices together and mix in a cup. Fill cup with water and mix until incorporated together and no dried spice sticking to the bottom of the cup.
